Last week at Blissdom, I got a chance to workout with, and interview, celebrity fitness trainer Valerie Waters. That post is coming soon, but the event was sponsored by California Raisins and they had super-delish raisin bars we grabbed post-workout.
California Raisins has more recipes (as well as a huge contest that you might want to check out), but this on-the-go raisin energy bar is so easy to make, and is super fabulous for a healthy snack on the go, that I had to share it. (It does contain nuts though.)
Raisin Energy Bar Recipe
So this is what you need to yield 10 bars:
- 2 c. California raisins
- 1 c. chopped walnuts
- 1 c. slivered almonds
- 2 tsp. almond extract
- 1 tsp. cinnamon
Combine ingredients in blender or food processor; pulse on and off until raisins and nuts are finely chopped, but not puréed. (Mixture should not be sticky.) Press firmly into a 10 x 4-inch rectangle on a parchment lined baking sheet and cut crosswise into 10 bars each 1-inch wide. Separate slightly to cook evenly and bake for 1 hour at 200 degrees; let cool and wrap individually. Nutrition details can be found on their website.
