This is a family recipe and a family favorite. It is easy to make and tastes delicious. What I like about it the most, is that you can cook almost everything in one large skillet, and the recipe results in two pies: one that you can eat right away and another one you can freeze!
You need a pound of ground beef (or ground turkey), one cup of rice, one 10oz package of chopped frozen broccoli (can be fresh if you want), 8 ounces of cream cheese, one can of cream of mushroom soup, one small onion, 8 ounces of shredded cheese, and two pre-made frozen pie crusts.
How to Make the Broccoli Rice and Ground Beef Casserole as a Pie
Make sure to defrost pie crusts in advance, then start putting everything together. You can make this really fast if you want to use shortcuts: get the rice you can cook in the pouch in a microwave, and the same for the broccoli. While those are cooking in the microwave (or if you want to do it the ‘old fashioned’ way, on the stove), chop up one onion. Then add that, plus the ground meat into a skillet. Cook. When done, add the one can of cream of mushroom soup, and the eight ounces of cream cheese into the skillet. Mix. Then add the cooked rice and the cooked broccoli. Mix again. Then pour the mixture evenly into the two pie shells. Top with shredded cheese. Bake in the oven at 350 degrees until the cheese melts and the pies are warm. Serve.
