I adore English Muffins. They were a staple for breakfast growing in my house. My favorite way to consume (aka devour) them was when they were smothered in butter. (Although globs of peanut butter on top was a close second favorite.)

As an adult, I now use them for more than just breakfast and with more than just butter. They can be a fun way to be creative in the kitchen (and get kids to eat too!) Mango Avocado Smash

What you need:

  • 1 small ripe avocado
  • 2 Bays English Muffins, any variety, split, toasted
  • 8 mango slicesDash of salt
  • 2 teaspoons chopped fresh herb of choice (like oregano, basil, parsley) or shredded spinich leaves.
  • 2 teaspoons pepitas (optional)

Grab the avocado and smear on muffin halves; sprinkle with salt. Then top with mango, your greens/herb or choice and pepitas if you want them.

Bacon Zola

What you need:

  • 4 Bays Sourdough English Muffins, split and lightly toasted
  • 8 slices thick-cut applewood smoked bacon
  • 1/4 cup gorgonzola cheese crumbles
  • 1 tablespoon mayonnaise
  • 4 thick slices ripe tomato
  • 2 tablespoons basil pesto
  • 2 tablespoons butter
  • 4 eggs
  • 1 cup baby arugula, loosely packed, divided

Cook bacon until crisp. Mix together gorgonzola and mayonnaise, mashing gorgonzola to create a thick, smooth spread. Spoon 1 tablespoon gorgonzola spread onto each toasted muffin half. Top with 2 slices of cooked bacon and a slice of tomato. Spread 1-1/2 teaspoons pesto on the other muffin halves. Set aside.

Melt butter in a large nonstick skillet set over medium heat, and crack eggs into skillet. Cook until egg whites are firm, but yolks are still slightly runny, about 5 minutes. Place one egg on top of each tomato slice. Top each with 1/4 cup loosely packed arugula, then muffin tops. 

Mediterranean Hummus Bites

What you need:

  • 3/4 cup red pepper hummus
  • 4 Bays English Muffins, any variety, split, toasted
  • 3/4 cup crumbled feta cheese
  • 1/2 cup pitted Kalamata olives,
  • 1/3 cup chopped sun-dried tomatoes in olive oil,
  • 1/4 cup chopped cucumber
  • 2 tablespoons chopped parsley

Spread hummus evenly over muffin halves; top with cheese, olives, sun-dried tomatoes, cucumber and parsley. If you want to serve as an appetizer, instead of a meal, cut each half into four wedges.

Speaking of appetizers, here are three recipes that you can use English Muffins to create hearty appetizers for your guests to nosh on. Just cut them into bite size wedges for game night nibbles, party treats, etc.!

English Muffin Crisps

What you need:

  • 2 Bays English Muffins
  • Ingredients to suit (see below)

Heat oven to 375F. Cut 2 whole Bays English muffins (any flavor) crosswise into 1/4-inch thick strips; arrange in a single layer cut sides down on rimmed baking sheet. Bake 9 to 10 minutes or until light golden brown. Let cool to room temperature. (Strips will become crisper as they cool).

If you want to flavor them, add these ingredient ideas. First, place crisps in a medium bowl. Drizzle 2 tablespoons melted butter over crisps; toss until evenly coated. Return to rimmed baking sheet in a single layer cut sides down.

  • Rosemary and Sea Salt Crisps: Sprinkle 1 teaspoon dried rosemary, crushed and 1/2 teaspoon coarse sea salt over crisps. 
  • Parmesan & Garlic Crisps: Sprinkle 2 teaspoons minced fresh garlic, 3 tablespoons grated Parmesan cheese and 1/4 teaspoon coarse sea salt over crisps. 
  • Cinnamon Sugar Crisps: Sprinkle crisps with a mixture of 2 teaspoons granulated sugar and 1/2 teaspoon cinnamon.

Once you have your flavoring of choice, return the crisps to the oven and bake 5 to 6 minutes or until deep golden brown. Let cool completely. Store tightly covered at room temperature up to 3 days.

Bacon Bites

What you need:

  • 6 Bays Original English Muffins, split, lightly toasted
  • 1/4 cup mayonnaise
  • 1/4 cup stout, or dark ale or beer
  • 2 tablespoons coarse grained or spicy brown mustard
  • 1/4 teaspoon hot pepper sauce
  • 2 cups (8 ounces) shredded sharp cheddar cheese
  • 1/2 cup crumbled crisply cooked thick sliced applewood smoked bacon (4 slices)
  • Smoked paprika (optional)

Combine mayonnaise, stout, mustard and hot sauce in a medium bowl; mix well. Stir in cheese and bacon. Spread mixture evenly over muffin halves all the way to the edges to prevent edges from over browning. Sprinkle lightly with paprika if desired.

Use a large sharp knife to cut each muffin half into quarters. Place quarters on a cookie sheet; freeze until firm, at least 1 hour. Place quarters in zip top plastic food storage bags; return to freezer. (Will keep up to 3 weeks) Place frozen quarters on a cookie sheet. Bake in a preheated 425 degre oven until heated through and cheese is melted, 6 to 7 minutes. Serve immediately.

Garlic Bites

What you need:

  • 1/4 cup butter, softened
  • 1/3 cup grated Parmesan cheese, divided
  • 2 garlic cloves, minced
  • 1 teaspoon chopped fresh parsley, optional
  • 6 Bays English Muffins, any variety, split, toasted

Mix butter, 1 tablespoon of the cheese, garlic, and parsley in small bowl. Spread 1 teaspoon butter mixture over each muffin half; place on baking sheet. Sprinkle remaining cheese evenly over muffin halves (1 teaspoon per half). Broil 1 minute or until lightly browned. Serve immediately.

Kid Friendly English Muffins Recipes

French Toast Strips

What you need:

  • 4 Bays Original English Muffins, split
  • ¾  cup milk
  • 3 large eggs
  • 1 tablespoon sugar
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon ground cinnamon
  • 1-2 tablespoons butter, divided
  • Maple syrup for serving
  • Fresh fruit for serving

Preheat the oven to 200°F. Place the English muffin halves in a baking pan just large enough to hold them in a single layer. Beat the milk, eggs, sugar, vanilla extract and cinnamon in a medium bowl. Pour the mixture over the English muffins, turning to coat. Let stand 20 minutes, turning once.

Heat a large nonstick skillet or griddle over medium heat. Melt half of the butter and add 4 muffin halves. Cook until the bottoms are lightly golden, about 3-4 minutes. Turn the muffin halves over and cook until lightly golden, about 3-4 minutes longer. Transfer the French toast to an ovenproof pan and hold in the preheated oven. Repeat with remaining muffin halves and butter.

Cut each English muffin half into three even lengthwise strips. Serve with a small ramekin of warm maple syrup for dipping and fresh fruit.

DIY Mini Pizzas

What you need:

  • Bays English Muffins. One per person.
  • Ingredients to taste

Have pizza night, but instead of ordering pizza to be delivered, make them yourself! This version is great for even little eaters! Cut the English Muffins in half. Then have the kids ‘decorate’ their mini pizza which ever way they would like. The benefit is that these are small ‘pizzas’ so if they don’t like their creation, you haven’t wasted too much!
