Chicken Wing Cupcakes

There are only a matter of hours until the Super Bowl XLVI kickoff. Regardless of what team you root for, or who ultimately wins, the best part of the game is the food.

While I wrote a post about fun Super Bowl food ideas, and even shared Coloring Sheets for the kids…..here is one recipe you should try.

While you can order from this Albany, New York bakery (who came up with this lovely creation) directly, I’m sure you can pull this treat off at home. If you really wanted to. And really, who wouldn’t want to.

If you can’t make it in time for the game tonight, serve it at your next basketball bash or baseball BBQ. You need corn muffin baking mix. Then mix a small amount of blue cheese into a can of cream cheese frosting.

Oh, and top with a chicken wing.

Online Cookie Recipe Swap 2011

I don’t know about you, but I have a lot of baking to do this week! (Which somehow seems to spill into the New Year as well.)

When I see the great goodies that other people make or bring to events or as gifts, I often think to myself, I really need to get some new cookie recipes. So I thought this might be a fun, quick, and easy way to share some cookie recipe ideas with each other.  Listed below is mine, but I would love if you would leave a comment with your favorite cookie recipe. Then come back and see what people have left! Maybe we can all pick up a new recipe this year, just in time to ring in 2012!

What you Need:

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 3/4 tsp baking powder
  • 1/2 tsp salt
  • Red raspberry seedless preserves
  • Confectioners’ sugar

How to Make:
  1. In a large bowl with electric mixer on medium speed, cream together margarine and sugar until light and fluffy. Add eggs and vanilla. Mix well.
  2. Sift together flour, baking power and salt. Add to wet mixture. beat until well blended.
  3. Divide dough into four equal portions. Wrap individually with plastic wrap. Refrigerate a least one hour or overnight.
  4. Preheat oven to 350F. Spray baking sheet with cooking spray. Place one portion of dough between two sheets of waxed paper; roll to 1/8 inch thickness. Cut into a star, heart or other seasonally appropriate shape using a 2.5 inch cookie cutter. Place one inch apart on prepared cookie sheet. Cut out another similar shape in the center of half of the cookies using a one inch cookie cutter. Repeat with remaining dough.
  5. Bake 8 to 10 minutes or just until edges are lightly browned. Removed to wire racks. Cool completely.
  6. Sift confectioners’ sugar over the cookies with the shape cut out of the center. Assemble cookies by spreading 2 tsp of preserves on each solid shape cookie. Top with shaped cookie with the center cut out. Store in airtight container at room temperature.

Online Shopping

I love online shopping. Who wants to schelp the kids to the store only to run around in circles finding someone to help you and wondering if you are getting the best price to boot?

As a Mom to a boy, I also dread the minuscule selection of boys clothing and shoes in brick and mortar stores. Really? You don’t think I need shoes for him or a decent shirt that does not look like he broke out of state prison yesterday? I still don’t understand the lack of allocated floor space, but it is a reality and one that even further drives me to the web.

Smilebox Review

The slogan for company Smilebox is “Create a Little Happiness”. A few years ago, when I got a Smilebox email from my Dad with pictures of him in Afghanistan, it was the way I could see him (before Skype became mainstream) in an element that an ordinary email attachment couldn’t do. Music, pictures that told a story, and more personal than an e-card.

Since then, the company has grown. More options, more choices and even a cool iPhone app where you can add characters, art and words to your ordinary pictures.

But at the heart, it is still the same. The opportunity to take your photos, put them in a musical slide show to say Hello, Merry Christmas, or Happy Birthday. A way to share new baby photos or your vacation pictures set to music that captures the essence of your trip and your love for family. Or a unique way to invite people to a special event.

It is all free, but if you want an ad-free experience, you can sign up for a membership. You can also add Smilebox to your tool bar (Mac or PC) making it easy at anytime to create a scrapbook, make a slideshow, or send an email to the grandparents with the grandkids pictures from soccer practice that day. Perfect Pairing: Good Friends and Frito-Lay

Most parties have chips and dip, but how do you prevent the dip doldrums?

Some blogging friends and I got together for a “Chip and Dip” #PerfectPairing party sponsored by Frito-Lay to share some recipes. It was a fun (and tasty) night.  There were five of us and each of us brought a bag of either Fritos, Lays or Tostitos, which pair perfectly with various dips, of course. We each brought our favorite dip and a copy of the dip recipe for each person. It was a blast sampling them all and leaving with some new recipes, which I wanted to share with you.

I brought a dip that used Blueberries. I think it is a great summer dip recipe when blueberries are bountiful. It is not for the calorie phob since it also has blue cheese and cream cheese, but those ingredients can be found in reduced fat or fat-free options.

Blueberry-Blue Cheese Dip

6 ounces crumbled blue cheese
1 1/2 cups of blueberries
8 ounces of cream cheese
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of hot chili sauce
1/2 cup finely cut green onions (green part only)
1/2 cup of chopped walnuts
Place blue cheese and blueberries in a food processor and blend until smooth. Transfer to a bowl and stir in the rest of the ingredients. Cover and refrigerate for one hour. Can be pre-made and stored for 3 days. Serve with Tostitos or Fritos, or even raw veggies, crackers or apple slices.

Two other dip recipes were bean-based with summery ingredients like corn and tomatoes.

Tex-Mex Dip (Courtsey of Sarah from In the Trenches of Mommyhood)
-1 can of black beans-rinsed
-1 can of black eyed peas-rinsed
-1 bag frozen southwestern-style corn
-3 or 4 jarred jalapenos-chopped  (You can leave this out if you want it milder.)
Marinade-1/2 cup canola oil, 1/2 cup sugar, 3/4 cup apple cider vinegar
Pour the marinade over all the ingredients and let sit in fridge for awhile. Use a slotted spoon to dish it out into a serving dish so it’s not swimming in the marinade. Best served with Tostitos Scoops.

 

Vic’s Black Bean Salsa (Courtesy of Kim from Mommycosm)
-2 cans Goya black beans (they’re in a blue can, usually found in the Mexican section)
-2 tomatoes, diced
-1 cup of diced onion
-1 handful fresh cilantro, chopped
-1 small bottle Kraft Zesty Italian (DON’T go for the low fat version, definitely not the same flavor!)
-1-2 tablespoons of chili paste to taste (usually found in the Asian section) 
Throw all the ingredients in a bowl, mix together and let sit in the fridge for 3-4 hours before serving. Serve with a “scoopable” tortilla chip like Tostitos.

For more recipe ideas, Frito-Lay has recipes on its website for great inspiration, and a party like this is a great idea for a Mom’s Nite Out. Just invite a few friends over and have them each bring their favorite dip along with copies of the recipe. The hostess supplies the chips and drinks. Voila! You have a great night with fabulous recipes to take home.

But here is one more dip that we tried that night. This one has chicken and is a great dip year round.

No Bones Buffalo Chicken Dip (Courtesy of Jodi from Mom’s Favorite Stuff)
-One pre-cooked rotisserie chicken, pulled into small pieces (about 2 1/2 cups)
-One cup of blue cheese salad dressing
-A half cup of buffalo wing sauce
-8 ounces of cream cheese
-Two cups of sour cream
Mix the blue cheese, Buffalo wing sauce, cream cheese, and sour cream together.  Stir in the chicken.  Bake at 350 for about 25 minutes. Serve with chip of choice.

 

All in all, these were amazingly yummy, but the best part of the night were the friends and great conversations.

Posh Peacock, Sarah Feather and Ovations for the Cure

While I have written a post before about the awesomeness of Boston-based Posh Peacock, I had to write another post on the newest cards from her collection and the powerful story (I shed a lot of tears) behind them.

Posh Peacock is donating 100% of the purchase proceeds of these featured card designs to benefit Ovarian Cancer Research. The inspiration is a woman named Sarah Feather, who lost her battle with ovarian cancer last month at the age of 39. She leaves behind a wonderful husband and two darling little boys. While her love lingers with all that knew her, these cards are a tribute to her beauty (inside and out), as well as a way Posh Peacock designer Christine Koh can honor Sarah’s memory and her love for aqua, pink and clovers.

The match-up equates to these stunning cards. Simply beautiful in either form.

I love the “Hello, Gorgeous” title on the aqua and pink cards, but the yellow and gray scheme on the other set is simply divine too.

The elegance transcends beyond the card to a stylish envelope match-up with a pop of pink or burst of sunny yellow. Since I believe in the power of a written card, even in the world of blogs and social media, having either set on hand to write a simple note to a friend or elegant prose to a family member is a smart move. Unique and Easy Grilling Recipes

Mom’s can rock the grill too.

This Memorial Day Weekend is usually the time we pull out the grill and “fire ‘er up”. While hamburgers, hot dogs, steak and chicken usually line the racks, there are so many other foods that can add some variety to the grilling season.

My favorites are appetizers that will amaze your guests and desserts that will delight everyone. So even if you decide to go the hamburger route, consider adding some grilling greatness to appetizers, desserts or side dishes for some BBQ flare.

For the next couple days, stayed tuned for a fabulous appetizer, side dish and dessert to whip up on the grill this Memorial Day weekend.

Appetizer:

Feta and Watermelon Kabobs

Take a cube of feta and cut into squares. Cut up some watermelon into squares as well. Then select fresh basil leaves. Alternate feta, basil and watermelon and put them on a skewer. Place each skewer on the grill for just one minute (make sure the feta doesn’t melt) and then serve.

Shrimp and Avocado

Peel and cut avocado into wedges. Take cook/peeled shrimp and place on the skewer. Add the avocado and voila! Place on the grill just enough to leave grill marks, then serve.

Water Wizz

For a fun bonus (sans grill) make a couple pitchers of water, preferably in a clear pitcher. In one pitcher, place frozen grapes. It adds great visual interest and also serves the purpose of ice cubes. As the grapes melt, it adds a touch of grape flavor. Any grape (or other fruit) will do, but I think green grapes look the best for a light summer feel.

In the other pitcher, add fresh cut pineapple and fresh mint leaves. You can leave out the mint to suit tastes, or even add fruit like raspberries or strawberries, but all give the water an amazing taste after letting it refrigerate for a few hours, and looks interesting sitting out on the picnic table.
